Turkey

Turkey is a versatile white meat with a mild, slightly sweet flavour that lends itself well to a variety of cooking methods, especially BBQ. When cooked over fire, turkey benefits from low and slow heat to retain moisture and develop a tender texture. The skin crisps up nicely when exposed to dry heat, providing a pleasant contrast to the juicy meat beneath. Smoke from woods like apple or cherry complements turkey’s natural flavours without overpowering them, adding subtle fruity and sweet notes. Dry rubs with herbs, spices, and a touch of sugar enhance the bird’s flavour and help create a beautiful bark on the surface. When selecting turkey for BBQ, opt for fresh or responsibly frozen whole birds or cuts such as breast, thighs, or legs. Fresh turkey will have a firm texture and a pale pink colour. Avoid pre-marinated or heavily processed products that may contain excess salt or additives. For storage, keep fresh turkey in the coldest part of your fridge and use within two days of purchase. If freezing, wrap tightly to prevent freezer burn and thaw thoroughly in the fridge before cooking. Cooking turkey on the BBQ requires patience and attention. Maintaining a steady temperature between 150 and 160 degrees Celsius allows the meat to cook evenly without drying out. Using indirect heat is best to avoid charring the skin prematurely. Basting or spritzing with a simple apple juice or cider mix can help keep the meat moist. Rest the cooked turkey before carving to allow juices to redistribute, ensuring every bite is succulent and full of flavour.

Preparation

Dry brine 24–48 hours ahead: coat with salt, sugar, and aromatics and refrigerate uncovered. Remove from fridge 1 hour before cooking. Pat dry. Spatchcocking dramatically reduces cook time and improves skin.

Health Notes

Turkey is an excellent source of lean protein, making it a great choice for those looking to build or maintain muscle while keeping fat intake moderate. It is rich in essential micronutrients such as B vitamins, selenium, and zinc, which support energy metabolism and immune function. Choosing lean cuts like the breast reduces saturated fat intake and supports heart health. Be mindful when purchasing processed turkey products, as these can contain added salt and sugars that may detract from its natural nutritional benefits. Preparing turkey from scratch allows you to control seasoning and avoid unnecessary additives, keeping your BBQ both wholesome and delicious.
