Prepare the Wings
Pat the chicken wings thoroughly dry with kitchen paper; this is crucial for achieving crispy skin. In a large bowl, combine the smoked paprika, chilli powder, garlic powder, and sea salt. Add the wings and toss well to coat them evenly in the spice mix.
Grill the Wings
Place the wings on the cooler side of the preheated grill, away from the direct heat. Close the lid and cook for 20-25 minutes, turning them halfway through. This indirect cooking allows the fat to render and the skin to crisp up without burning.
Crisp and Serve
For the final few minutes, move the wings over to the hot side of the grill to char and crisp up the skin. Watch them closely to prevent them from burning.
