A simple, nutty brown butter dressing infused with fresh sage to complement grilled dishes.
Prepare the Squash
Toss the prepared butternut squash slices in a bowl with the olive oil, ensuring they are evenly coated. Season generously with sea salt and freshly ground black pepper. This simple preparation allows the natural flavour of the squash to shine through once it hits the grill.
Grill the Squash
Place the squash slices on the direct heat side of the grill. Cook for 3-4 minutes per side, until you have some light char marks. Move the slices to the indirect heat zone, add the sage leaves to the grill alongside them, and continue to cook for another 10-15 minutes, or until the squash is tender when pierced with a knife.
Serve
Once tender, remove the squash and crispy sage leaves from the grill. Arrange on a platter, crumbling the sage over the top. Serve immediately as a side to your main course.
