Prepare the grill and apples
Set up your BBQ for direct heat grilling at medium-high temperature (about 180-200°C). Place apple slices on the grill and char until marked and softened, about 3-4 minutes per side. Remove and set aside.
Prepare the slaw base
Combine the shredded cabbage and sliced red onion in a large mixing bowl. Season with sea salt and freshly ground black pepper, then toss well and let rest for 10 minutes to soften.
Make the dressing and assemble
