For the Caper Butter
The simplest way to cook brill is almost always the best. A clean grill, good fish, high heat — it doesn’t need much else. The butter or sauce at the end is the finish, not the point. This recipe keeps things straightforward, letting the natural flavour of the brill shine through, supported by just a few well-chosen ingredients.
Grilling the whole fish over direct heat brings out a delicate smokiness while preserving its tender, flaky texture. The caper butter adds a subtle punch, balancing richness with a bright, briny note from the capers and a touch of freshness from parsley and lemon juice. It’s a clean, considered approach that reflects the everyday BBQ ethos — simple, seasonal, and thoughtful cooking over fire.
Mastering this dish also means paying attention to technique: a hot grill, the right moment to turn the fish, and knowing when it’s perfectly cooked by using an instant-read thermometer. Resting the fish briefly after cooking lets the juices settle, ensuring every bite is as moist and flavourful as it should be. This is BBQ as a skill, a craft — not an event — where the ingredients and method come together naturally, without fuss or fanfare.

Health Notes
Oily fish like trout and mackerel are rich in omega-3 fatty acids, which support heart health and reduce inflammation. They're also a lean, complete protein source. Squid is exceptionally low in fat and calories for a filling ingredient.

Prepare the Grill for Direct Heat
Ignite a full chimney of Weber briquettes. Once fully ashed over, distribute them evenly across one half of the charcoal grate for a direct, high-heat zone. Clean and oil the cooking grate. Aim for a dome temperature of 200-220°C.
Prepare the Brill
Pat the whole fish completely dry with paper towels—this is crucial for crisp skin. Using a sharp knife, score the fish three to four times deeply on both sides, cutting down to the bone. Rub the fish all over with olive oil and season the cavity and the exterior aggressively with salt and pepper. Place the lemon halves directly on the cooking grate to warm.
Grill the Fish
Place the brill directly over the high-heat zone. Close the lid and allow to cook undisturbed for 8-10 minutes. The skin should be deeply golden and starting to crisp. Using a long-handled fish spatula, carefully turn the fish over. Cook for a further 8-10 minutes. The fish is done when the internal temperature, measured at the thickest part near the bone, reaches 63°C.
Prepare the Caper Butter
While the fish rests, prepare the caper butter. In a small saucepan over medium heat, melt the butter and cook until it foams and the milk solids turn a deep nut-brown colour. Remove from the heat immediately. Stir in the capers, parsley, minced garlic, and lemon juice. Season with a pinch of salt.
Serve
Transfer the whole grilled brill to a serving platter. Pour the warm caper butter generously over the fish. Serve immediately with the grilled lemon halves for a final squeeze of acidity.

An instant-read thermometer is the single most reliable tool for achieving precise cooking results over fire. At Smoke & Soil, we champion clean, whole-food cooking that honours seasonal ingredients and respects the natural flavours of your produce. This thermometer fits perfectly into that ethos by taking the guesswork out of doneness, allowing you to cook meats, fish, and even vegetables to perfection every time. It is indispensable for ensuring food safety, particularly with poultry, where undercooking can pose health risks. It also speeds up weeknight cooking by giving you immediate temperature feedback, so you never have to second guess whether your food is ready. Using an instant-read thermometer correctly is as important as owning one. Insert the probe into the thickest part of the meat, avoiding bones which conduct heat differently and give false readings. Take multiple readings to confirm consistency, especially with larger cuts. This tool is not just for meat; it can help you nail the perfect temperature for everything from bread to custards, supporting a wide range of fire-cooking techniques. It is a straightforward way to elevate your BBQ game without fuss or guesswork. The instant-read thermometer embodies the no-nonsense, practical approach Smoke & Soil stands for. It is a tool that rewards attention to detail and encourages respect for the ingredients and the cooking process. Investing in a good quality, fast-reading model will pay dividends in flavour, texture, and safety. It also complements other techniques like carryover cooking and indirect heat methods, making it a versatile addition to your BBQ toolkit.
