Tender carrots, slow-roasted and smoked for a deep, earthy flavour, then tossed with honey and fresh thyme.
Prepare the chutney base
Place all the ingredients in a medium saucepan and stir to combine. Bring the mixture to a gentle simmer over a medium heat, stirring occasionally to dissolve the sugar.
Simmer and thicken
Reduce the heat and let the chutney simmer gently for 10-15 minutes, or until the apple has softened and the liquid has reduced to a syrupy consistency. The chutney should be thick enough to coat the back of a spoon.
Cool and serve
Remove from the heat and allow to cool completely before serving. The chutney will thicken further as it cools. It can be served immediately or stored in a sterilised jar.
