A classic, simple apple sauce, perfect for accompanying pork dishes.
Prepare the base
Melt the butter in a saucepan over medium heat. Add the finely chopped shallot and sauté until softened, about 3 minutes.
Add peppercorns and deglaze
Add the crushed black peppercorns and cook for 1 minute to release their aroma. Pour in the brandy, if using, and allow it to flame off or reduce for about 2 minutes.
Simmer sauce
Add the beef stock and simmer gently until reduced by about half, roughly 5 minutes.
Finish with cream and seasoning
Stir in the double cream and heat through without boiling. Season with salt to taste. Serve warm.
