Prepare the potatoes (10 mins)
Wash and dice the potatoes into even 2cm cubes. Toss with olive oil, smoked paprika, salt and pepper in a mixing bowl until evenly coated.

Wrap and cook in embers (45 mins)
Lay a large sheet of heavy-duty foil, place the potatoes in the centre and fold into a sealed parcel. Place the parcel directly into hot embers of the firepit. Cook for approximately 45 minutes, turning every 15 minutes to ensure even cooking.
Check and serve
Carefully remove the foil parcel from the embers. Open cautiously to avoid steam. Test potatoes for tenderness with a fork. Serve hot alongside your main.
