Combine the Ingredients
In a large, heavy-bottomed saucepan, combine the shredded red cabbage, sliced red onion, and grated apple. Pour over the cider vinegar, sprinkle in the brown sugar and mixed spice, and season generously with salt and pepper. Give everything a good stir to combine.
Braise the Cabbage
Place the pan over a medium heat and bring to a gentle simmer. Once simmering, reduce the heat to low, cover with a tight-fitting lid, and leave to cook gently for 20-25 minutes, or until the cabbage is completely tender. Stir occasionally to prevent it from catching on the bottom.
Serve
Once cooked, check the seasoning and adjust if necessary. This dish is excellent served warm alongside smoked sausages, pork chops, or roasted game.
