
Black Krim is a Ukrainian heritage beefsteak variety with dramatic dark maroon-brown colouring and a complex, slightly smoky, deeply rich flavour that no standard red tomato can match. Originating from the Crimean peninsula, it's one of the most visually striking and flavourful heritage varieties available. The flesh is dense, almost wine-dark, with a richness that makes it feel substantial even eaten raw.
Flavour
Rich, complex, slightly smoky and earthy with a wine-like quality that sets it apart from conventional tomatoes. The flavour has more depth and less brightness than a standard red beefsteak — it's a mature, intense flavour profile. Less sweet than cherry types but more interesting. A natural pairing with strong cheeses, cured meats, and complex dressings.
In the kitchen
Outstanding in heritage tomato salads dressed simply with olive oil and salt — its flavour needs no elaboration. Excellent on grilled sourdough with burrata and basil. The dark flesh holds up well when grilled cut-side down and develops an extraordinary caramelised crust. Also magnificent slow-roasted or in a rich ragù.
Growing
Indeterminate cordon, best grown under glass in the UK. Moderate yields compared to cherry types but the quality justifies it. Susceptible to cracking — maintain consistent watering. The dark colour develops fully in bright sunshine; polytunnel growing produces the best colour and flavour. Plants benefit from extra support as the large fruits are heavy.
